A school cafeteria has a problem no commercial venue has. Everyone eats at the same time, the window is short and fixed, and the people clearing up are students who have somewhere else to be.
Nobody is going to follow a careful routine. Whatever you put in the room has to work when it’s used badly, in a hurry, by someone who isn’t paying attention.

The twenty minute problem
A secondary school lunch service might move eight hundred people through a hall in three sittings. A university dining hall does the same in a longer window with less supervision.
Either way the shape is the same. Almost nothing happens, then everything happens, then the room has to be reset for the next group or the next lesson.
During that peak nobody has time to make a decision. A student walks to the tray return holding a carton with an inch of juice in it and a cup half full of water. If the only option is a general waste bin, that’s where it goes, liquid and all.
What that does to the room
Liquid in a lined bin is the whole downstream problem in a school.
The bag gets heavy and splits, usually while a member of site staff is carrying it out through a corridor. The bin itself needs washing rather than relining, which is a job nobody has time for between sittings. And the floor near the tray return gets wet, which in a hall full of moving students is the thing you least want.
Emptying at the tray return instead means the liquid never enters the waste stream in the first place.
Why the layout works against you
In most halls the servery and the kitchen are at one end, and the tray return is wherever there was space. Often that’s the opposite wall, or a corridor just outside.
So the nearest sink is behind a counter that’s still serving, in a kitchen that’s busy, through a door students don’t go through. Staff end up carrying tubs of liquid across a room full of people, or leaving it until after the bell.
Putting a station at the tray return solves the geography rather than fighting it.
What the unit does
Two compartments with a fixed perforated HDPE separator between them. Cartons, cups, lids, straws and food debris stay on top. Liquid drains into a lower reservoir that holds up to 21 gallons.
It stands 36 inches tall, roughly adult waist height, on a footprint of about 14 to 16 inches wide by 8 to 10 inches deep. Waist height matters in a school more than most places, because a station a student has to bend over gets used badly or skipped.
The body is heavy-duty industrial-grade HDPE, chosen for impact resistance. In a hall where things get knocked, that’s a practical consideration rather than a specification.
Emptying is a twist of the drain plug at the base of the narrow end after rolling it to a drain. Site staff never lift it full. Two of the four casters lock so it stays where it was put, which matters when eight hundred people walk past it.

Colour and visibility
It comes in Black, Blue, Red, Green and Yellow.
In a school the argument for a bright colour is stronger than anywhere except a stadium. A station that reads clearly as the liquid one, distinct from the general waste bin beside it, is the only instruction that will land during a rush. Some sites use a consistent colour across every hall so the rule is the same building to building.
Beyond the cafeteria
The same gap shows up in places schools rarely equip.
Staff rooms have a domestic sink that blocks. Sixth form and student union common rooms serve drinks with no plumbing at all. Sports halls and events, open evenings, parents’ evenings and end of term functions all produce a concentrated load in a room with no drain.
A university is the same pattern at a larger scale, with dining halls, cafes, bars and event spaces spread across a campus.

Count tray returns and drink points, not students.
One hall with a single tray return needs one. A hall with returns at both ends needs two. A campus with several dining outlets needs one per outlet, plus the common rooms and event spaces. Where should it go in a cafeteria?
At the tray return, beside the general waste. The point is that the liquid decision happens before anything is carried anywhere.
Will students actually use it?
If it’s at the point they already stop, at waist height, and visually distinct from the bin next to it. Those three things do more than any sign.
Is it robust enough for a school hall?

Who empties it, and how often?
